Pan fried Potatoes with Broccoli
I love potatoes, in any form, plain boiled, curried , mashed you name it. I think its the ultimate comfort food. I made a roast during the week end and wanted to make a side dish to accompany it. My boys love broccoli so I threw in some precooked broccoli in during the last minute of pan frying.
Recipe : Pan fried Potatoes with Broccoli.
4 medium potatoes
1 small broccoli ( or 1 cup full frozen broccoli florets thawed)
1 small onion finely chopped
2 cloves garlic finely chopped
6 curry leaves
1/2 - 1 tsp chilli flakes
1/2 tsp cumin seeds
1/2 tsp mustard seeds
water to boil the potatoes
Bring a pan full of water to boil, lightly salted. Boil the potatoes till cooked through. ( if using fresh broccoli add the florets to the pan just 2 minutes before draining the water, there is nothing more horrible tasting than over cooked broccoli). Drain off water completely.
Heat a wok or a large frying pan with a thin layer of oil just enough to cover the bottom, add the cooked potatoes and fry till the sides start to turn golden, tossing now .
Once the potatoes start to turn golden , remove , add a little oil if there isnt enough oil left, about 1 tbsp, add mustard seeds , cumin seeds and curry leaves. Once the seeds start to pop add add onion and garlic and fry till the onions start to go golden.
Return the potatoes to the pan along with broccoli and add chilli flakes , and season with salt. Toss for a few minutes , then switch off heat. Serve as a side.
