Simple Roast Potatoes


I love potatoes in any form. Curried, in stews, fried, roasted, plain, boiled ................  Unfortunately, my elder son doesn't share the same love for it unless it is crispy like chips.  I recently made roast potatoes and they turned out perfect, crispy on the outside and nice and soft on the inside. I think the secret was parboiling the potatoes and then roasting them. 

Recipe: Simple Roast Potatoes

about 3 large regular potatoes
water for boiling
salt
olive oil or butter, melted

1. Peel and cut the potatoes into large pieces. Place in lightly salted water and bring to a boil. Cook for about 8 - 10 minutes till almost tender.

2. Drain and let it stay in the colander for 5 - 10 minutes, then toss in olive oil  ( a generous amount of about 2-3 tbsp) or melted butter. Season with salt. Put everything in a baking tray, make sure they are in one layer.

3. Place in a preheated oven at about 200 degrees Celsius gas mark 5  till golden and crispy outside. Give the baking tray a shake every now and then so the potatoes get roasted evenly.
